I would like to know, what do Quality VBR and MBR mean?

Quality VBR - when using this encoding mode you can create a video file having predefined quality (specified in VBR Quality field below) regardless of its bitrate (like when working with JPEG files - you must specify quality of an image before saving).
MBR - when using this encoding mode you can create a video file that contains a few video streams of different bitrate.
